Onions. Aint they perfect? Don’t matter if they’re shallots, vidalias, reds or whites. If an onion is willing to grace your plate, it’s the greatest gift in the world. Makes you taller, makes you smarter, makes your teeth shine. Boy, oh, boy, onions are perfect. Quick, name that movie…although, to be fair, I did modify the quote just a tad!
Brine Time: Overnight Prep Time: 5 minutes
Serving Size: 1 serving (roughly 1/4 cup)
1/8 (1″ wedge) Vidalia Onion
1/8 (1″ wedge) red onion
1½ tablespoons granulated sugar
3 tablespoons cider vinegar
1/2 tablespoon Hellman’s mayonnaise
1 teaspoon whole grain mustard
Salt and pepper, to taste
1. Whisk the cider vinegar and sugar together until the sugar dissolves. Add the vidalia and red onion and stir to combine. Chill overnight. Note: do not season with salt or pepper at this point. They will act as a dehydrator and will drain all of the water out of the onion.
2. The next day, drain and discard the vinegar brine. Stir in the mayonnaise, mustard and season with salt and pepper to taste.
