Serving: 1 Side Salad
Substitute this simple side salad in lieu of mexican rice or refried beans as a nice way of adding flavor to Mexican dishes without increasing calories.
1-2 leaves of iceburg or romaine lettuce, julienned
2-3 scallions, minced
1 teaspoon cilantro, chopped
Gently mix all ingredients together in a small bowl.
Variation: This makes a wonderful light lunch or dinner salad. Simply add shavings of manchego or cheddar cheese, sprinkle with salt and pepper, and top with a light red wine vinagrette. S’wonderful! If you happen to have some ham or croutons available, even better. It’s a salad! How can you can go wrong?
