Prep Time: 10 min Makes: 1 side salad
For the Savory Honey Dijon Vinaigrette
1 tablespoon champagne vinegar
1½ tablespoons good olive oil
1/2 tablespoon egg beaters
1/2 tablespoon honey
1/4 teaspoon savory dijon mustard or dijon mustard
1/8 teaspoon garlic paste
1/16 teaspoon salt
1/16 teaspoon freshly ground pepper
For the Salad
2 leaves of romaine lettuce, julienned
1 (1/2″ thick) slice of red onion, halved
Shavings of gruyere and parmiggiano, to taste
Freshly ground black pepper, to taste
Half of the Savory Honey Dijon Vinaigrette
1. Vinaigrette – Combine all ingredients in a mason jar, seal and shake to combine. If you don’t have a mason jar, you can whisk the ingredients together in a small mixing bowl until thickened.
2. Salade – Assemble the salad and top with the vinaigrette. Not to quote the Barefoot Contessa, but how easy was that?
Variation – For a lunch or dinner salad, double the salad ingredients and top with Salt and Pepper Roast Chicken.
