As a singleton, I am always looking for ways to use pepperoni. I love pepperoni, but the smallest bag you can buy has what? 60 slices of pepperoni. These petite bites pack a cheesy pepperoni punch. Easy to make, yummy to eat, what’s not to love?

1 (4 biscuit) can of your favorite Pillsbury Biscuits
8 – 16 slices of pepperoni, to taste
4 – 8 cubes of Monterey Jack cheese, to taste
Salt, Pepper and Italian Seasoning, to taste
Using a makeshift rolling pin, flatten the biscuits until they are about 1/2″ thick. I like to stuff each biscuit with 2 cubes of Monterey Jack cheese and 4 slices of pepperoni, but they are your pepperoni bites, so suit yourself. After stuffing, gently wrap all four ends of the biscuit around the cheesy pepperoni, being sure to tuck the ends underneath before placing in a mini loaf pan to bake. Sprinkle with salt, pepper and Italian Seasoning. Bake according the instructions shown on the biscuit can. Serve warm with a side of Ranch dressing or warm marinara sauce. Yum!
