Sugar Cookie Crust
3 tablespoons all-purpose flour
1/16 teaspoon baking powder
1/32 teaspoon salt
1 tablespoon softened butter
1 tablespoon granulated sugar
1/2 tablespoon light brown sugar
1/2 tablespoon Egg Beaters
1/8 teaspoon vanilla extract
1. Preheat oven to 350°.
2. Mix all ingredients together in a small mixing bowl. Gently spread into a mini cast iron skillet.
3. Bake at 350° for 5-7 minutes until the sugar cookie is golden brown and soft to the touch.
Cream Cheese Frosting
1 ½ oz softened cream cheese
2-4 tablespoons confectioner’s powdered sugar, to taste
1/2 teaspoon vanilla extract
Zest and Juice of 1 (1″) slice of lemon
Pinch of salt
Mix all ingredients together in a small mixing bowl. Gently spread onto the warm sugar cookie.
