A light, (possibly) diet friendly, bowl of frosting yumminess!
Prep Time: 10 minutes Chill Time: at least 30 minutes
Makes: about 1/2 cup of frosting (enough for a two-layered, 4″ round cake)
1/4 cup heavy whipping cream
3 tablespoons confectioner’s sugar
1 teaspoon vanilla
4 ounces mascarpone cheese
1. In the bowl of a stand mixer, whip the heavy whipping cream, confectioner’s sugar and vanilla to soft peaks (firm enough to hold it’s shape at the end of the whisk).
2. Fold in 4 ounces of mascarpone cheese.
3. Chill before using.
