Make this for breakfast and munch on it all day!
Prep Time: 10 minutes Bake Time: 30-35 minutes Serving Size: 1 mini loaf
For the Strawberry Bread
1/2 cup all-purpose flour
3 tablespoons granulated caster sugar
1 tablespoon light brown sugar
1/4 teaspoon baking soda
1/8 teaspoon salt
1/16 teaspoon ground cinnamon
1 tablespoon Egg Beaters
1/4 cup buttermilk
1 tablespoon + 1 teaspoon canola oil
1/2 teaspoon vanilla extract
5 strawberries, cubed
1 strawberry, cubed, for decorating
Mix all ingredients together in a small mixing bowl until the batter is smooth and creamy. Top with the last remaining cubed strawberry. Bake at 350° for 30-35 minutes. Let cool for at least 10 minutes before topping with the glaze.
Whisk together and drizzle over the warm strawberry bread. Hungry yet?
