Remember that scene in Pretty Woman when Richard Gere offers Julia Roberts a strawberry to compliment the flavors of a glass of champagne? Classic! I’m guessing they were drinking a beautiful, full bodied, intensely French Veuve Clicquot. Mais, hélas, tels extravagances are not yet accessible to the single chef! I’m afraid there aren’t many labels to choose from when shopping for mini or demi-bouteilles.
Champagne is generally categorized by how much sugar is added to the bottled wine during the fermentation process. For this bubbly amaretto cherry spritzer, I prefer to use a good quality brut (dry) champagne. However, for those who like a sweeter cocktail, you can always choose a demi-sec or doux labeled sweet champagne.
Prep Time: 10 minutes Serving: 1 Flute
1/2 tablespoon amaretto flavored liqueur
3 frozen dark sweet cherries
1/2 demi-bouteille brut champagne
1. Combine the amaretto liqueur and the 3 cherries in a champagne glass. Let rest in the refrigerator for 10 minutes. As it sits the amaretto liqueur will soften the cherries and absorb their flavor.
2. Remove from the refrigerator and add enough champagne to fill the glass. Serve chilled.
