Vanilla, blackberries and butter…oh my! If ever there were a king of cobblers, this is it! A sugar coated buttery biscuit topping crowns this vanilla blackberry wunderkind. One small suggestion – make the biscuit topping on the day you intend to bake this (it doesn’t keep well in the fridge).

For the Blackberries
1 (6oz) pint of blackberries, halved
3 tablespoons granulated sugar
1½ tablespoon water
1/2 tablespoon self-rising flour
1/4 teaspoon vanilla paste
1. Bring all ingredients to a boil in a small saucepan over medium heat. Continue cooking for 1-2 minutes until the blackberries have thickened and turned a lovely deep purple. Set aside to cool for 5 minutes.
2. Using a slotted spoon, gently transfer the blackberries to a ramekin. Strain the blackberry sauce through a fine mesh sieve to remove any seeds. Add the strained sauce to the ramekin.
1. Stir the butter into the flour. Add just enough milk to bring the dough together and begin kneading the dough into a ball. Gently shape the dough and place on top of the blackberries. As an added bonus, generously sprinkle the finished cobbler with sugar.
2. Bake at 400° for 10-15 minutes or until the cobbler is golden brown and bubbly!
