Frosted sugar cookies are the perfect accompaniment to summer holidays. This crowd pleaser is sure to entertain your guests, start a conversation and add a little color to your tablescape. Prep Time: 10 minutes Bake Time: 10-12 minutes
Makes: 1 (5″) mini skillet Special Equipment: a 10″ tart pan with a removable base
Sugar Cookie Crust
1¼ cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
8 tablespoons softened butter
1/2 cup granulated sugar
1/4 cup light brown sugar
1 teaspoon vanilla extract
1. Preheat oven to 350°.
2. Mix all ingredients together in a small mixing bowl. Gently spread into a mini cast iron skillet.
3. Bake at 350° for 10-12 minutes until the sugar cookie is golden brown and soft to the touch.
Cream Cheese Frosting
8 oz softened cream cheese
1/2 – 2/3 cup confectioner’s powdered sugar, to taste
1½ teaspoons vanilla extract
Zest and Juice of 1/4 of a lemon
Pinch of salt
Mix all ingredients together in a small mixing bowl. Gently spread onto the warm sugar cookie.
